Hi Busies!
If you’ve read my post on 2 ingredient pesto chicken, you know where this is going. Yes, the 2 ingredients here are cajun seasoning and chicken. Some sort of miracle happens when these 2 ingredients are cooked together. Seriously – while we’re eating, I usually ask Drew to help me brainstorm a few adjectives that will help describe the meal to you, my lovely Busies – and Drew said this meal only needed one: “crazy.” And he’s not wrong! The combo of the rich spices and the creamy pasta is crazy delicious. A match made in heaven. A restaurant classic that comes together in 15 minutes – perfect for a quick date night celebrating 5 years with my love!
I know – we should have ventured out to celebrate. But it was a crazy busy week for both of us introverts, and once I mentioned to Drew that there was Cajun Chicken in the fridge, it was pretty much game over. Sooo, our anniversary was a great night in, enjoying each other’s company and planning a celebratory vacation for later this fall, when we’ll both have a little more time. We do make it out of the house occasionally, I swear! (see evidence below).
Rub those spices alllll overrrrr!
The chicken comes together in a snap as part of meal prep, and quickly earned a return spot in the rotation in my meal prep guides. Something truly amazing happens when you pan-fry this chicken. Somehow, probably in some cooking-chemistry lesson that I should know but don’t, your one-ingredient spice rub turns into a magical crust, and the chicken comes out tender and juicy, just begging to be sliced and layered over creamy pasta. And don’t forget the peas, because VEGETABLES. If you want to take a healthier route, this chicken is also great over salad, or with brown rice and a side of veggies. If you really want some bonus points, you can make your own cajun seasoning, but this is one of my Busy Girl Bites – a good quality cajun seasoning will do the trick and save some time.
Add 3 more ingredients – pasta, Alfredo, and a frozen veggie of your choice – and you have a 5 ingredient meal! (add the veggie to the boiling pasta water during the last 5 minutes of cooking for easy cooking and cleanup)
