What I Ate This Week
As weeks go y’all, these March weeks are some of the busiest ones for me. You’ll notice that most of my pictures this week are of snacks, breakfasts, or weekend meals, because at work we order dinner from a restaurant every night, eat at work, then keep on working! It sounds appealing at first, but by the second week, all I want is a home cooked meal.
Dinner on Saturday was a Hello Fresh delivery that a friend gave to me because she wasn’t going to have time to make it. It was a balsamic pork, really similar to this Balsamic Chicken that I’ve made before, but with fig preserves and sautéed shallots, which added a great depth of flavor. I also forgot how delicious oven roasted green beans are. Salty, crispy, crunchy, YUM!
Over the weekend I also took the dogs to the park and grabbed some kale and quinoa bowls from a spot around the corner from our house. This one was a Mexican bowl with chipotle puree and honestly, anything with avocado in it will win me over.
During the week, I’m all about healthy snacks that will keep me away from the processed snacks that are always so easy to reach for. Almond butter on apples or bananas feels like a sweet, indulgent treat but still keeps me on track with healthy eating.
When we work on Saturdays, we also eat lunch at the office. On St. Patty’s day, I was feeling the green vibes, so I grabbed a big kale salad and this amazing smoothie with kale, avocado, spinach, banana, and almond milk. I can’t wait to try making a version at home!
Sunday breakfast this morning was sweet potato toast with avocado and scrambled eggs. I sliced up the sweet potatoes and roasted them a few weeks ago, them popped the leftovers in the freezer. It was sooo easy to just pop them in the toaster this morning for a quick 10 minutes while I scrambled the eggs. Yes, I eat ketchup on my eggs 😀
Friday snack was a #treatyoself with leftover charcuterie from a girls night. I felt so indulgent and accomplished putting this plate out on the counter just for Drew and I, basically pretending like we live in an oh-so-fancy magazine world where charcuterie platters are just placed out on the reg… If you could see the rest of the counter outside this pic, our kitchen was most definitely NOT magazine worthy! But sometimes it’s the little things, like this fancy plate, that got me motivated to clean the kitchen on a Friday after work.
