Rinse potatoes and pat dry. Chop in half and then quarter each half. Add potatoes to a large bowl, drizzle in olive oil and spices. Toss to coat.
Bake at 400°F on a greased cookie sheet for 30 minutes, stirring halfway through, or until golden and crispy. If needed, broil for 3-5 minutes at the end of cooking to enhance the golden brown crust.
