Meal Bite: Crock Pot White Chicken Chili

Hi Busies! It’s officially that time of year – Happy Fall Y’all!  And sorry (not sorry) if this is #basic – White Chicken Chili is something I look forward to all year.  A warm, comforting bowl of spicy, savory, tender chicken & beans – all

Meal Bite: Brown Butter Crispy Cod with Succotash

Hi Busies! I have my own opinions when it comes to Blue Apron, but there’s no denying that they slay when it comes to flavor.  The combination of corn, shishito peppers, shallots, and roasted potatoes in this succotash is truly on another level.  Salty, crispy, crunchy,

Meal Bite: 2 Ingredient Cajun Chicken

Meal Bite: 2 Ingredient Cajun Chicken

Hi Busies!

If you’ve read my post on 2 ingredient pesto chicken, you know where this is going.  Yes, the 2 ingredients here are cajun seasoning and chicken.  Some sort of miracle happens when these 2 ingredients are cooked together.  Seriously – while we’re eating, I usually ask Drew to help me brainstorm a few adjectives that will help describe the meal to you, my lovely Busies – and Drew said this meal only needed one: “crazy.”  And he’s not wrong!  The combo of the rich spices and the creamy pasta is crazy delicious.  A match made in heaven.  A restaurant classic that comes together in 15 minutes – perfect for a quick date night celebrating 5 years with my love!

Busy Girl Bites | Cajun Chicken

I know – we should have ventured out to celebrate.  But it was a crazy busy week for both of us introverts, and once I mentioned to Drew that there was Cajun Chicken in the fridge, it was pretty much game over.  Sooo, our anniversary was a great night in, enjoying each other’s company and planning a celebratory vacation for later this fall, when we’ll both have a little more time.  We do make it out of the house occasionally, I swear! (see evidence below).

Rub those spices alllll overrrrr!

The chicken comes together in a snap as part of meal prep, and quickly earned a return spot in the rotation in my meal prep guides.  Something truly amazing happens when you pan-fry this chicken.  Somehow, probably in some cooking-chemistry lesson that I should know but don’t, your one-ingredient spice rub turns into a magical crust, and the chicken comes out tender and juicy, just begging to be sliced and layered over creamy pasta.  And don’t forget the peas, because VEGETABLES.  If you want to take a healthier route, this chicken is also great over salad, or with brown rice and a side of veggies.  If you really want some bonus points, you can make your own cajun seasoning, but this is one of my Busy Girl Bites – a good quality cajun seasoning will do the trick and save some time.

Add 3 more ingredients – pasta, Alfredo, and a frozen veggie of your choice – and you have a 5 ingredient meal!  (add the veggie to the boiling pasta water during the last 5 minutes of cooking for easy cooking and cleanup)

So, there you have it!  “Crazy” Cajun Chicken – perfect for date night or any other night of the week!  If you make this, tag me @busygirl_bites or #busygirlbites on Instagram so I can see how it turned out, or let me know in the comments below!

We clean up pretty nice!  Cheers to 5 years and many more!

Meal Prepping Live Blog

Hi Busies!  Let’s be real, this blog isn’t really live, because when I’m meal prepping, I am a literal kitchen tornado.  I’m flying between the cutting board, stovetop, oven, and sink, not to mention washing any number of things off my hands about every 10

DIY Bite: Making a Plant Bed // Planting Trees and Shrubs

DIY Bite: Making a Plant Bed // Planting Trees and Shrubs

Hi Busies!

Aaaahhhh. There’s nothing better than feeling clean and kicking up your feet after a long day of yard work.  I’m sitting down now to write this post after another of my DIY gardening adventures.  I call these adventures because I’m by no means an expert, especially at gardening.  But I try, and that’s what counts, right?!  This adventure was creating a bed and planting a Japanese Maple tree.  It’s one of the final steps to getting our front yard in better shape.

Most of my gardening adventures start with walking the dogs or taking a run around my neighborhood for inspiration.  Sometimes I even snap a quick picture and send it to my mom, who belongs to that secret club where moms go to share their wisdom (that’s a thing, right?), and she tells me what to buy!  Since we moved to our new house, I haven’t had much time to get anything planted, but since I implemented my meal prep program, my weekends are less busy with grocery shopping and cooking, so I have more time for projects.  In fact, after I finish writing this, I’m going to heat up a pre-made meal (this sun-dried tomato chicken, kale, and quinoa bowl), turn on Netflix, and spend the night relaxing instead of cooking!  I just finished watching Ozarks, and am currently watching The Handmaid’s Tale – any recommendations for what to watch next?

The before – lots of work to do!

If you know anything about summer in North Carolina, you’ll know that it’s not a good decision to start landscaping projects in the summer.  It’s insanely hot, and unless you can work on a day after a big rain, the soil is hard and dry and 10x harder to dig up.  Well, I have been known to make some questionable decisions, and sure enough I picked a day that was 95° and sunny to start. Womp womp.  Let’s just say A LOT of sweat went into this project.

This project had 2 phases.  The first phase was the green boxwood shrubs, and the 2nd phase was the rounding of the corner bed and planting the Japanese Maple.  Drew and I decided on a very young Japanese Maple.  We saved about $60 by not getting a more mature one, and we quickly grew attached to this particular lopsided little tree, which reminded us of the Charlie Brown Christmas Tree!  I don’t have too many pictures of the boxwood phase, but it follows all the same steps and uses the same tools as the pictures below.  Check the bottom of the page for a few boxwood progress pictures.

First, the tools:

  • a good shovel
  • a wheelbarrow
  • enough soil and mulch to fill in the bed
  • a half moon edger (only if you’re planning to make straight beds – if you’re doing round, a shovel is fine)
  • weed prevention paper and pins
  • gardening gloves (optional – either way, treat yo self to a manicure afterwards!)
  • whatever you want to plant!

Then, channel your inner Stanley Yelnats and start digging!  On the straight areas I used the half moon edger, but for the round part I used the shovel.  A few tips:

  • Be cautious not to strike any buried pipes or wires – you can always call your utility company for a free locate service if you’re worried!  I cleared away all the grass and weeds and then about 1-2 inches of dirt.
  • If symmetry is important to your layout, make sure to step back and view your progress from a distance occasionally to make sure you’re on track.  It’s easy to get lost in the details when you’re stuck up close.
  • Bonus Fit Bite – target big muscle groups while you work!  Not only will you be less sore after, but you’ll be working the right muscles and avoid injury.  Stay focused on keeping your core engaged, and try to use your legs (squatting, lunging, etc.) to help push the shovel into the dirt.  Use your back (lats), biceps, and core, rather than shoulders and neck, to lift the piles of dirt into the wheelbarrow.

Wheelbarrow load 1 of 5 – so. much. dirt.

Then I dug the hole for the tree based on the instructions provided, and checked to make sure the root ball would fit correctly.

I had to put the tree in at an angle to make sure the trunk was as vertical as possible.  Hopefully this will help it grow straighter!

Once the hole was done, I covered the whole area in weed paper and stuck the U-shaped pins down to hold it in place.  Then I cut an X to fit the root ball in the hole.

Now, the fun part!  Dropped the tree in, filled the hole with new soil, and covered the whole thing with 2 inches of mulch.

The finished product – our very own Charlie Brown tree!

Now time to grow grow grow, little guy!

Phew!  It sure is easier said than done.  A lot of dirt and a lot of sweat went into giving this little tree a new home, but it’s a great step towards adding some visual interest and a focal point to the front yard.

Have y’all had any luck with gardening adventures?  Share any fun stories in the comments below, or share your before/after pictures on Instagram and tag @busygirl_bites or #busygirlbites so I can see your results!

Here are a few bonus pictures from phase 1 of this project, which was planting the boxwood shrubs.

Dug up some artifacts!  Thinking about a fun way to display these as another project – stay tuned!

Travel Bite: Paris, je t’aime!

Paris!  The last leg of our trip was filled with amazing food and wine, more sightseeing, and plenty of wandering the streets and jardins of this beautiful city.  This was the one place of our trip that I had been before, during a class trip in high school.  Although there is so much of the world we have left to explore, there’s something amazing about revisiting a place at a different time in your life that really gives you perspective.  It was crazy to think that 9 years before, I had visited some of the same spots.  I hadn’t been to college, hadn’t met Drew, and hadn’t lived anywhere on my own.  I have so much to be thankful for that has happened since then!

2016 vs 2007!

We stayed at an Air BnB that I can only describe as Parisian.  Original hardwood floors, lovely architectural details, and an amazing view of the streets of Paris.  Not to mention that our host set out a French breakfast for us every morning!  Eating yogurt out of little glass jars, and fresh baguette smothered in butter and jam, we planned out what sights we wanted to see that day.

Eiffel Tower, Notre Dame, and the Louvre!

On our last night, we stopped at a cafe and grabbed some croque monsieurs and a bottle of red wine, and headed over to the lawn outside the Eiffel Tower to watch the nightly light show.  It was such a special night, and a great way to end our travels.  We learned a lot about traveling, and about each other, on this trip, and I’m so excited to see what our next adventures bring!

A few must-do’s in Paris:  macaroons, the Louvre, gelato, and falafel.  Drew was so excited to see La Joconde in real life ?

What are your favorite things about Paris?  Let me know in the comments below!

Hi Busies! TACOS.  I think that’s all that needs to be said here, right?!  Okay, see you next post! …just kidding.  But really, tacos are just something special.  A perfect little bite of flavor, wrapped up in a warm tortilla hug.  And then another.  And
